                      TROPICAL CARROT CAKE


1 c. sugar
1 c. oil
4 eggs
3 c. grated carrots
1/2 c. walnuts
1/2 c. chopped pineapple, drained
1/4 c. pineapple juice
1/2 c. coconut
2 c. flour
2 t. soda
2 t. cinnamon
2 t. baking powder
1 t. salt

          Cream sugar and oil.  Add eggs one at a time.  Add
remaining ingredients.  Bake in 9 x 13 at 350 degrees for 40
minutes.
