=========================================================================== BBS: The GWE BBS Date: Fri Oct (12 19) Number: 97 From: ARIAS #216 @151 Refer#: NONE To: Recvd: YES Subj: Carrot Cake recipe Conf: (37) Home Cooki --------------------------------------------------------------------------- Here is a carrot cake recipe that I got from The Red Spoon Collection: Best Recipes for Sensational Deserts (Betty Crocker) I love this cake it is very  moist and tasty! 2 cups all purpose flour 2 cups finely shredded carrots 1 1/4 cup sugar 1/2 cup vegetable oil 1/3 cup water 1 1/4 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon ground cloves 1 teaspoon ground nutmeg 1 teaspoon vanilla 3 eggs 1 cup chopped nuts Cream cheese frosting (see next post) Heat oven to 350 degrees. Grease and flour 2 round pans 8 or 9 by 1 1/2  inches. Beat all ingredients except frosting, in large bowl on medium spped,  scraping bowl constantly until blended, about 1 minute. Beat on medium speed,  scraping bowl occassional for 2 more minutes. Pour into pans. Bake until wooden pick inserted in center comes out clean, 35 to 40 minutes.  Cool 10 minutes; remove from pans. Cool completely fill layers and frost top  of cake with Cream cheese frosting.
