                          FRIENDSHIP CAKE

Must put into a glass jar (gallon).  Use fruit in juice, not syrup.
Makes 2 tube pans or 4 load pan cakes.  Time to prepare 31-34 days.

1 pint starter (recipe to follow)
1 16 ounce can light peaches, sliced
1 20 ounce can pineapple tidbits
3 6 ounce jars maraschino cherries
7 1/2 cups sugar
2 boxes golden cake mix
2 boxes instant vanilla pudding mix
8 eggs
1/3 cup oil
2 cups raisins
2 cups walnuts or pecans
2 cups coconut

Day 1:  Pour starter into gallon jar and peaches and juice (cut each
slice into 3 pieces).  Add 2 1/2 cups sugar.  Stir, cover jar loosley
and keep at room temperature.  Stir every day for 7-10 days.  All sugar
may not dissolve for several days and do not cover tightly.
Day 7-10:  Add pineapple tidbits and juice, 2 1/2 cups sugar, stir as
before, stirring every day.  Your starter has not changed color and your
fruit will foam when stirred.
Day 21:  Add three small jars maraschino cherries.  Cut each cherry in
half and add 2 1/2 cups sugar, stirring daily for 7-10 days.  Cherries
will give juice a pink color.  After 7-10 days, you will now bake your
cakes.
Preheat over to 300 degrees.  Grease and flour pans, drain fruit into
large bowl, pour juice into three pint jars, beat 4 eggs.  Pour cake mix
and pudding mix, 2/3 cups oil and 1/2  of the fruit into large bowl,
stirring with wodden spoon until well mixed.  Stir in 1 cup each
raisins, walnuts, and coconut.  Pour into pans and bake 1 hour and 20
minutes.  The 3 pints of juice that you have left, give to a friend as a
starter-one for you and three for them.  Never refrigerate starter.  Day
1 must start 3-4 days after fruit has been drained.


FRIENDSHIP CAKE STARTER

1 cup crushed pineapple, drained
1 cup sugar
2 teaspoons brandy

Combine ingredients in a glass gallon jar.  Let set for 2 weeks, covered
loosely with foil with a wooden spoon inserted through the foil to stir
daily.  Do not remove foil or spoon.  Be sure to stir daily.  After 2
weeks add:
     1 cup maraschino, including juice
     2 tablespoons brandy
Let set 2 more weeks, stirring daily.  In the 4th week add:
     1 cup sliced peaches, including juice
     1 cup sugar
     2 tablespoons brandy
Let set 2 more weeks stirring daily.  In the 6th week, strain fruit from
the juice, using a plastic strainer (do not use metal).  You may use
fruit for ice cream topping.  Juice is starter for Friendship Cake (1
pint per batch).
