Lasagne noodles, cooked. 1 lb fresh Spinach 5 oz. fresh mushrooms 1 cup grated carrots 1/2 cup chopped onions 1 Tbsp oil 15 oz. Tomato Sauce 6 oz. Tomato paste 1/4 cup ripe olives, sliced (black) 1 1/2 t. oregano 2 cups drained cottage cheese or ricotta 16 oz. Jack cheese, sliced Rinse Spinach and cook in a covered saucepan, turn leaves often. (The water on the leaves will cause them to steam, not boil.) In separate Saucepan combine the mushrooms, carrots, onions,and hot cooking oil till tender, but not brown. Stir in tomato sauce, paste, oregano. Grease a 9x13x2 pan. Layer half the noodles, half the cottage cheese, half the spinach, half the Jack and half the sauce mixture. Repeat, researving some Jack for the top. Bake 30 minutes at 375 degree oven. let stand for 10 minutes before serving. given to me by a great lady....Mrs. Sherry DeRosia.
