For all those cold winter nights (or just for a great cup of cocoa), here's an

easy recipe for Peppermint Schnapps.

1 pint Everclear
1 ounce peppermint extract
2-2 1/2 cups sugar
1 gallon distilled water

Mix everything in a large jar (I use a sun tea jar) and refrigerate for at

least 24 hours.

I serve this during the winter in a cup of cocoa, but whenever you want the

flavor of mint, it tastes great!!!
