Baking Time : 20 to 25 min. Oven Temperature : 375 deg F. Mashed potatoes, wellseasoned and fluffy, are baked with a center of cheese, which melts, and in the molten state resembles a center of golden lave. For 4 servings you will need: 4 to 5 medium potatoes peeled and cut into chunks. 2 Quarts boiling, lightly salted water. 1/2 cup butter or margarine. 2 eggs 1 tsp. salt 1/4 tsp. white pepper (any pepper will do if you don't have white) 1 cup shredded medium to sharp Cheddar cheese. 1) Put potatoes into boiling salted water (make sure water covers potatoes). Cook about 15 min. or until potatoes are tender. 2) Drain Potatoes. Mash potatoes using hand mixer and then beat in the butter, eggs, salt and pepper. Whip until light and fluffy. Reserve (save) some potatoes for decoration. 3) Put potatoes into a buttered 2-quart casserole. Make a deep well in the center of the potatoes. Using a pastry tube, make potato swirls around the edges. 4) Put the cheese into the center of the potatoes, pressing it down firmly. 5) Bake at 375 deg. F. for 20 to 25 mins. or until cheese is melted and potatoes are heated through. Tips : Use 4 potatoes for average sized appetites, 5 if you have a "big eater" in the group. Good served with : Any roasted or braised meat or poultry. For 2 servings: Use half of the ingredients. Use a 1-quart casserole and decrease baking time by to 15 min. For 8 servings: Double the ingredients. Use a 3-quart casserole and increase baking time to 30 to 35 mins. It works out that total time for making these is about 1 hr. So start cooking these about an hour to an hour and a half before your meal is due to be served.
