BY: Princess #2 @5459 PENUCHE (rich and creamy brown sugar fudge) 1 1/2 cups granulated sugar 1 cup brown sugar 1/3 cup light cream 1/3 cup milk 2 tbsp butter or margarine 1 tsp vanilla 1/2 cup broken pecans Combine first 5 ingredients in a saucepan. Cook until sugars dissolve and the  mixture in the consistency of a soft ball (238 on a candy thermometer).  Remove from heat and cool to lukewarm without stirring. Add vanillla and beat  vigorously until it becomes very thick and starts to lose it's gloss. Stir in  nuts. Spread ina shallow pan and cool in fridge. Cut when firm. CHOCOLATE MALLOW FUDGE 4 squares Baker's unsweetened chocolate chopped. (1 square = 1 once) 3 tbsp butter 3 cups icing sugar 1/4 tsp salt 1/3 cup hot milk 1 tsp vanilla 1 cup Kraft miniature marshmallows 1 cup chopped walnuts ( I prefer it without the nuts!) Melt chocolate and butter in a large microveable bowl on MEDIUM for 2 minutes  or until melted. Stir in icing sugar, salt, hot milk and vanilla. Mix well. Fold in marshmallows and nuts. Spread into a wax-paper lines 9"X5" (2L) loaf  pan. Chill until firm. Cut and store fudge in a airtight container in the refrierator. I\ I/ Irincess
