  The light colouring or the french fries is due to either or both these 

reasons...1] too low a sugar verus starch content...the sugar carmelizes which 

causes the brown colour to show up; or the surface starch is washed off when 

the chips are soaked in water before frying. Sorry...forgot to insert the "2" 

after the semi-colon.
