=========================================================================== BBS: The GWE BBS [ASV] [CIN] Date: 01-24-93 (13:23) Number: 97 From: DAPPY #10 @6181*1 Refer#: NONE To: ALL Recvd: YES Subj: Quesadillas Egg Diablo Conf: (37) Home Cooki --------------------------------------------------------------------------- Quesadillas Egg Diablo 1 tablespoon water 1/4 cup chopped onions 1/4 cup chopped red peppers 1/2 cup chopped cooked ham 4 eggs 1 tablespoon milk 1 tablespoon minced cilantro 4 (8-inch) flour tortillas 1/2 cup (2 ounces) shredded Monterey Jack cheese Salsa (optional) Sour cream (optional) In 10-inch skillet or omelet pan, stir together water, onions and peppers. Cover and cook over medium heat until vegetables are softened, about 10 minutes. Stir in ham. In small bowl, beat eggs until blended. Stir together 1 tablespoon of beaten egg and milk. Set aside. Stir cilantro into remaining beaten egg. Pour into skillet. As mixture begins to set, gently draw an inverted pancake turner completely across bottom and sides of pan, forming large soft curds. Continue until eggs are thickened and no visible liquid egg remains. Do not stir constantly. Spoon scant 1/2 cup of the egg mixture onto one side of each tortilla. Top each with 2 tablespoons cheese. Fold tortillas over and place on baking sheet. Brush tops with reserved egg-milk mixture. Bake in preheated 375-degree oven until lightly browned, about 10 minutes. Serve with salsa and sour cream, if desired.
