Deep fry, or pan fry. Here's the catch: put a tablespoon or two of worchester (sp) sauce into the egg before you dip the chicken breast, and if you can, use home made bread crumbs. The worchester sauce gives it a flavor that your diners will be hard pressed to identify. Also, it's delicious.
