Rinse peppers if you want your "eggs" less spicy. Don't rinse if you like them hot. Stuff peppers lightly with cheese, then set them aside. Thoroughly mix sausage, biscuit mix, and remaining cheese and make small patties from the mixture. Place a pepper in the center of each pattie and wrap and seal the dough around the pepper. then coat one or two "eggs" at a time by shaking them in a bag of pork seasoning. Put the "eggs" into a heated, lightly greased skillet over a small bed of coals. Fry until brown. Serve with something cold to drink.
