Leek and Potato Chowder

2-3 leeks
Butter
1 cup stock
2-3 potatoes cooked or raw
3 cups milk

Cook diced leeks in melted butter until soft and golden.  Add stock and simmer 

until cooked and uncooked
potatoes.  Add milk and (if you didn't use uncooked potatoes) cooked potatoes. 

Season to taste with salt pepper and
cayenne.

This recipe is really easy and makes wonderful soup.  If you want a simple 

vichycoise (no I can't spell it) chill the soup and run it through a food 

processor or press through a sieve.  Garnish with fresh chives.
