This is one of my easy, fun and extra good to eat.

6 slices bacon                         1 table spoon honey
2 teaspoons Dijon mustard              1 1/2 teas whit wine vinegar
salt and pepper                        1 (12oz)bag fresh spinach
6 tablespoons olive oil                1/2 head lettuce

cut bacon into 1 inch pieces and fry until crisp, drain and set aside.  

Meanwhile, combine mustard, saltand pepper.  Stir inthe oil a little at a 

time, until it is all absorbed.  Stir in the honey and vinegar.  Wash the 

spinach and remove the tough stems.  Tear the spinach and the luttuce and 

place in a serving bowl.  Add the drained bacon to the dressing and warn it 

gently, stirring. Pour over the greens and toss.   Should serve 6 to 8, but 

not at my house.
