I hope someone out there likes shortbread. This is really easy & delicious. Hint: The colder your hands are when you work the dough, the easier it will be to handle. 1/4 Lb Butter (1 stick) softened 5 tablespoons sugar 1 1/4 cups plain flour Cream butter and sugar until light and fluffy, mix in flour thoroughly. Form into a ball and place on floured surface. Roll out to desired thickness. Cut to desired size. Pinch all around outer edge, prick with a fork over entire top. Place on cookie sheet and bake at 375 degrees for 30 to 35 minutes. Remove cookie sheet from oven and sprinkle top of shortbread with sugar. Allow to sit 5 to 7 minutes then remove to cooling rack and let cool completely. Enjoy!!
