I am still looking for some good easy crock pot recipes!!!! I don't want to brag, BUT, I have been told my receipe for Crock Pot Scalloped Potatoes are GREAT! Mexiscalloped Crock Pot Potatoes and Ham Pre-spray your crock pot with a cooking spray. Clean (but don't peel) about 8-12 good sized potatoes (depends on the size of your pot. In a microwaveable dish melt the following: 1/3 C. Southwestern Ranch Dressing 1/3 C. butter 1/2 package of Velveeta (this depends on how cheesy you want it) 1 1/2 C. half and half Add 1 package Knorr Golden Onion dry soup mix 2 Tab. parsley flakes 4 C. of ham (or Turkey Ham) diced in small bite sized pieces When all ingredients are melted, place potatoes and ham chunks in crock pot. Pour cheese mixture on top cover and cook. Cook on high for 3-4 hours, or cook on low 4-5 hours. You'll need to check this. I've discovered there is a difference in crock pot temps.
