I don't want to appear dumb, but if I buy the little cakes to make MS#@>strawberry shortcake, whipped cream, and strawberries, what the heck do I MS#@>to the strawberries to make that GOOD juice that gets down into the little MS#@>cakes. In my recipe book, they don't use any juice, just the berries plain. BUT, I know my sister, when she makes it, she buys the frozen package of strawberries that comes with its own juice. You thaw it out and you have juice. BUT, I did see a recipe for Strawberry Glace' Pie, and here's how the strawberries are prepared for that.... Wash and hull 1 cup berries. Simmer berries and 2/3 c. of water for 3 minutes, or until berries soften. Blend 1 c. sugar, 3 Tbsp. cornstarch, and 1/3 c. water. Stir into berry mixture and cook, stirring constantly, until thickened. I imagine you could control the thickness for a more liquid juice for shortcake. Good luck. ---
