1 cup sugar                      1 tablespoon butter
1/4 cup flour                    1/4 cup fresh lime juice (or bottled)
3 tablespoons cornstarch         grated rind of 1 lime or lemon
1/4 teaspoon salt                baked 9-inch pie shell
2 cups water                     Meringue pie topping (use your favorite
3 eggs, separated                  recipe)

1. Combine sugar, flour, cornstarch, and salt in saucepan.  Gradually stir in
water.  Stirring contstantly, cook until thickened.  Gradually stir the
mixture into beaten egg yolks, return to low heat and cook for two minutes
while stirring.

2. Stir in butter, lime juice and rind, and cool slightly.  Pour into baked
pastry shell and cool.

3. Top with meringue and brown in the oven.

This recipe comes from the New York Times Cookbook and it's a good one.
