Title: Jack & Jilli Chili
3 1 lb cans of pinto or black beans, drained, save liquid
1 Tbs oil
1 lg onion, chopped
1 bell pepper, chopped
3 garlic cloves, chopped
1 tsp cumin
2 tsp chili powder
1 1 lb can of tomatoes
1/2 tsp salt

1.  Saute onion and green pepper in oil for about 5 min.
2.  Add garlic and saute another min.
3.  Add remaining ingredients and simmer about 20-30 min.  Add bean
  liquid if necessary to retain moist consistency.
Variation: Chili-Mac:  Toss with 6-8 oz of cooked macaroni.

Serves 12 pre-school or 9 school-age children.

Title: Peanut Butter Balls
1/2 c peanut butter
1/2 c honey
1 c wheat germ
2 Tbsp powdered milk

Mix ingredients well and roll into balls.  The balls can be rolled in
coconut or have chocolate bits added in but that makes it more candy
than nutritious.  Another idea is to press the mixture in a pan and cut
into squares.  These candies stay fresh for a long time but can be gooey
if not refrigerated or frozen.  A big hit!

Title: Slim Pickin' Chicken Fingers
1 lb boneless, skinless chicken breasts sliced across the "grain" in
   3/4" strips
1 c corn flake crumbs
1 1/4 tsp Spike seasoning
1/8 tsp garlic powder
1/8 tsp pepper
2 egg whites
1 Tbs oil

1.  Combine cereal crumbs and seasonings.
2.  Beat oil into egg whites.
3.  Roll chicken pieces in egg mixture, then in crumbs.
4.  Spread out on a greased baking sheet.
5.  Bake at 400F for 15 min.

Variation:  For eggless version, roll chicken pieces in 1/2 c yogurt
thinned with 1 Tbs milk, then in crumbs.

Serves 6 preschool or 4 school-age children
