Cook until fowel is tender, about 1-1/2 hours, adding salt when half done. Remove chicken from broth, and set aside on warm platter. Strain broth; bring to boiling point over high flame, stir in rice and cook over moderate heat until tender. Salt to taste. Cool soup slightly and blend with avgolemono sauce. See directions below. Foul may be brushed with melted butter and lemon, and browned in oven. It may be cooked whole or cut into serving pieces. For sauce, beat three eggs well. Add juice of 1-1/2 lemons, beating continuously. Gradually beat in approximately half the broth.
