Cookies: 6 squares (1 oz. each) semi-sweet chocolate 3 squares (1 oz. each) unsweetened chocolate 2 Tbsp. butter/margarine 2 eggs 1 cup sugar 1/3 cup flour 1/2 tsp. baking powder 1 tsp. salt 1/2 tsp. vanilla extract Filling: 1 1/2 Tbsp. sweet butter, melted 2 Tbsp. + 1 tsp. light cream or half and half 2 cups sifted confectioners' sugar For cookies: Preheat oven to350 degrees. Butter baking sheet or line with parchment paper. In top of a double boiler over hot, not boiling water, melt both chocolates with butter and let cool. In a medium bowl, beat eggs with sugar. Combine flour, baking powder and salt and add to egg mixture. Stir in vanilla and melted chocolate mixture. Let batter stand 5 minutes to stiffen. Drop by half teaspoonfuls 2 inches apart on prepared baking sheed and bake for 8 to 10 minutes or just until set (cookies will be soft, but they'll firm up after cooling). For filling: In a small bowl, combine butter and cream. Add confectioners' sugar 1/3 at a time, blending with a fork. Let cookies completely cool before filling. There are two ways you can eat these.
