=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-19-93 (20:02) Number: 394 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Saulisbury Steak Surprise Conf: (37) Home Cooki --------------------------------------------------------------------------- RECIPE NAME: SAULISBURY STEAK SURPRISE WITH GRAVY KEY INGREDIENTS: gr. sirloin, blue cheese, SOURCE: Serves 4 2 lb. ground beef sirloin 3 Tbsp. finely chopped onion 2 Tbsp. tomato paste 1 tsp. salt 1/2 tsp. pepper 1 block (4 oz.) blue cheese, quartered 2 Tbsp. vegetable oil 3 Tbsp. butter/margarine flour for dredging 1 cup beef stock or broth 1/2 lb. mushrooms, trimmed In a large bowl, mix together ground sirloin, onion, tomato paste, salt and pepper. Form into 4 oval patties. Bury a piece of blue cheese in the center of each patty, sealing well (squish cheese together a little). Melt oil and butter in a large, heavy skillet. Dredge patties in flour and over medium heat, brown on both sides. Pour beef stock over, cover and cook 20 minutes. Remove steaks to a platter and keep warm. Put mushrooms in food processor with steel blade. Process until finely ground.
