Cover and bring to a boil over high heat. Skim foam from top. Add celery, carrots, onion, salt; thyme, pepper and barley; return to a boil. Cover and reduce heat to low. Simmer 2 hours or until meat is tender. Add green beans and tomatoes; simmer uncovered 30 minutes longer. Per serving: 274 calories, 28 g pro, 21 g car, 9 g fat, 74 mg chol, 778 mg sod.
