=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (11:56) Number: 329 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Brazilian Black Bean Soup Conf: (37) Home Cooki --------------------------------------------------------------------------- Brazilian Style Black Bean Soup 2 c. dried black beans, washed well 2 qt. hot water 1/2 T. salt 1 c. tomato sauce 1 large onion, minced 1 large garlic clove, minced 2 oz. salt pork, diced 1 or more small, seeded, dried red chili peppers (optional) 3/4 lb. pork butt, cubed 1/2 lb. linguesa (Portuguese sausage), cut in 2" lengths 1/4 t. freshly ground pepper iced orange slices watercress sprigs Soak beans in water for 4 hours. Add salt, tomato sauce, onion, garlic and salt pork. Cover and bring to a boil. Reduce heat and simmer 45 minutes. Add red pepper, pork, linguesa and pepper. Bring back to boil and simmer until beans are tender but still hold their shape. Discard the peppers. Adjust the seasonings to taste and serve with hot French rolls. Pass iced orange slices and watercress sprigs.
