=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-08-94 (23:35) Number: 383 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Cajun Dirty Rice Conf: (37) Home Cooki --------------------------------------------------------------------------- CAJUN DIRTY RICE 2 chicken livers 6 chicken gizzards 1/2 c. oil 1/2 lb. ground beef 1 large chopped onion 1 chopped bell pepper 3 ribs chopped celery 2 cloves minced garlic 1/4 t. cayenne pepper 1/2 t. salt 2 bay leaves 1/2 t. thyme 2 c. water 2 c. uncooked rice 4 green onions, chopped 1/3 c. chopped parsley Boil livers and gizzards until done. Brown beef in oil, crumbling, until brown. Add onion, bell pepper and celery to the meat. In a blender, chop gizzards and livers . Add to the meat mixture. Add garlic, cayenne, salt, bay leaves, thyme and 2 c. water. Simmer for 30 minutes. Remove the bay leaves and set aside. Boil the rice as usual and when done mix with the heated mixture. Add chopped green onions and parsley. Remove from heat 10 minutes before serving.
