Combine olive oil, lemon juice, mustard, garlic and dried oregano. Pour over pork. Refrigerate 1 to 8 hours. In a bowl, stir together the yogurts and sour cream and refrigerate, covered until ready to use. Remove pork from marinade. Stir-fry in a non-stick pan over medium heat for 3 minutes or until done. Fill pockets with pork, top with yogurt mixture, garnish with chopped onion and tomato.
