Your friend is right. A few tablespoons (maybe 3-4) of drippings, fat included. Stir in an equal part of flour and stir, stir, stir. Use a wire whisk if you need to, over medium heat.Add about 1/2 teaspoon salt. When smooth and lightly brown, add milk, stirring like crazy, until thick, cooking over medium heat. Gravy is one of those things that was never meant to be low fat. Use the fatty drippings and use whole milk. The trick, I've found, is to be sure to add plenty of salt. It just isn't good if it's not salty enough. Good luck.
