=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:35) Number: 377 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Hot & Sweet Diced Chicken Conf: (37) Home Cooki --------------------------------------------------------------------------- Hot and Sweet Diced Chicken Shanghai 1 whole chicken breast, boned and cut into 1/2 inch dice 1 egg white 1 t. cornstarch 1/2 t. salt 3 T. peanut oil 2 dried red chili peppers 1 c. diced bamboo shoots 1 c. diced carrots, blanched for 1 minute 1/2 c. diced water chestnuts 1 green bell pepper, cut into 1/2 inch dice 1 T. hoisin sauce or brown bean sauce 2 t. sugar 1 T. rice wine or dry sherry 1 slice ginger root, minced Combine chicken, egg white, cornstarch and salt. Set aside. Heat oil in wok or skillet and stir fry chili peppers until pungent and brown. Add chicken mixture and stir fry for 30 seconds. Add vegetables and continue stir frying another seconds. Blend in remaining ingredients and cook and stir for 2 minutes.
