=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:17) Number: 348 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Mexican Stuffed Peppers Conf: (37) Home Cooki --------------------------------------------------------------------------- Mexican Stuffed Peppers 4 medium green bell peppers 1 small onion, minced 1 lb. ground beef 1/4 c. mild taco sauce salt/pepper to taste 1 T. vegetable oil 1 clove garlic, minced 1 T. chili powder 1/4 c. roasted peanuts, fine chop 1/4 c. shredded Cheddar cheese Preheat oven to 350 degrees. To prepare peppers, cut 1/2 inch off the top and save. Seed and rinse the peppers. Boil in water for 5 mnutes. Chop saved pepper slices. Heat oil in a medium skillet. Add chopped peppers, onion, garlic and beef. Cook until meat is no longer pink. Drain off fat. Remove pan from heat, add chili powder, taco sauce, peanuts, salt and pepper. Pack into peppers, then set in baking dish. Press cheese into filling. Add 1/2 inch water to pan and bake 25 to 30 minutes until hot and the cheese browns.
