Scoop out the pulp from the potato halves into a bowl, leaving 1/4 inch thick shells, mash pulp and reserve shells. Add 1 oz. mozzarella, the tomato sauce, ricotta cheese, oregano, garlic powder and pepperoni to potato pulp and stir to combine. Spoon 1/2 of the potato mixture into each reserved shell and top each with 1/2 of the remaining mozzarella cheese and 1/2 of the Parmesan. Set potato shells in a 1 quart casserole and bake until thoroughly heated, about 10 minutes. Makes 2 servings.
