=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:01) Number: 336 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Sausage, Sweet Peppers An Conf: (37) Home Cooki --------------------------------------------------------------------------- Sausage, Sweet Peppers And Pasta 3 lb. sweet Italian sausage 6 green peppers, cut in 1" strips 6 red peppers, cut in 1" strips 2-15 oz. cans tomato sauce 15 oz. can Ro-tel tomatoes 4 cloves garlic, minced salt/pepper to taste Parmesan Cheese Olive Oil Pasta Pierce sausages with a fork. Place in a skillet with enough water to cover. Simmer until cooked, about 20 minutes. Remove, cool and cut into one inch sections. Add more water to the pan and par-boil the peppers. Cover the bottom of a saucepan with olive oil. Saute' the garlic, add tomato sauce, Ro-tel tomatoes, salt and pepper. Place two of the red peppers and two of the green peppers in a food processor and puree. Add to the tomato sauce and simmer one hour. Alternate the remaining peppers and sausage on skewers, and grill 15 to 20 minutes over a hot fire or saute' in olive oil for 15 minutes. Place pasta on a large platter, cover with sauce, sprinkle with Parmesan and surround with the grilled peppers and sausage.
