=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:03) Number: 339 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Taco Rice Conf: (37) Home Cooki --------------------------------------------------------------------------- Taco Rice 1 lb. ground beef 1/2 c. chopped onion 1 pkg. taco seasoning mix 1 1/2 c. water 1 1/2 c. thinly sliced zucchini 1 c. frozen corn 14 1/2 oz. can stewed tomatoes 1 1/2 c. uncooked instant rice 4 oz. shredded cheddar cheese In a large skillet, brown the ground beef and onion, drain. Stir in remaining ingredients except the rice and cheese and bring to a boil. Stir in rice. Reduce heat to low, cover and simmer for 5 to 7 minutes or until the liquid is absorbed, stirring occasionally. Remove from heat. Fluff with a fork, sprinkle with cheese. Cover and let stand 3 minutes or until the cheese is melted. Garnish with cilantro and cherry tomatoes if desired. Looks nice topped with sliced jalapeno halves.
