=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:19) Number: 355 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Tomato Beef Conf: (37) Home Cooki --------------------------------------------------------------------------- Tomato Beef 1 lb. flank steak, trimmed Marinade: 2 t. light soy sauce 2 T. water 1 egg white 2 t. cornstarch 1 T. vegetable oil 1 T. fermented black beans, mash 1 clove garlic, mince 2 t. vegetable oil Other: Vegetable oil, for blanching 1/4 small white onion, cut in 1 inch squares 1 small green pepper, cut in 1 inch squares 2 tomatoes, peeled and cut in wedges 2 green onions (white only) cut in 1 inch pieces Seasonings: 3 T. soy sauce 2 T. chicken broth 1 T. dry sherry 1 t. sugar Cornstarch paste 1/2 t. sesame oil Slice steak against the grain 1/8 by 1 by 1 1/2 inches thick. Combine with marinade ingredients in the order listed, mixing well. Let stand for 10 minutes. Combine slightly smashed black beans with garlic and oil and set aside. Set wok over high heat for 1 minute. Add 2 c. oil and heat to 300 degrees. Add beef, blanching until the redness is gone. Remove and drain. Remove all but 3 T. oil from the wok. Add black bean mixture and stir fry for 30 seconds until fragrant. Add white onion and green pepper and stir fry for 30 seconds. Return beef to wok along with tomatoes and green onions. stir fry for 1 minute. Add soy sauce, broth, sherry and sugar, mix well and bring to a boil. Thicken with 1 Tbsp. cornstarch paste and sprinkle with sesame oil to serve.
