You can specify a "Uses ProtocolDump" to create your own menu.

If you don't use a protocoldump, yes.  If you do, you'll have to add it 
yourself.

Any one of us could answer that, not just Scott... Anyway, it's in your 
MAX.CTL -- do a search for "Protocol" and you'll find it eventually. 
Basically, you tell it you want to use an external file to list the protocols 
rather than Maximus's internal method. If you add a new protocol, you must 
remember to also add it to this external list.
If you continue to use the internal list, the new protocol will automatically 
appear in the list if you set it up appropriately.
BTW, the internal list structure is stored in the language .MAD files, but all 
you can really do with that is change the looks of the box or something.
