Makes 4 dozen. Haven't tried it yet, but it sounds good. 1/2 cup margarine, softened 1/2 cup sugar 1/2 cup brown sugar, firmly packed 1 cup pureed cooked pumpkin 1 egg, beaten 1 tsp vanilla 2 1/4 cups flour 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 1/2 tsp nutmeg 1/2 salt 1 cup (6oz) semi-sweet chocolate chips 1/2 cup chopped nuts Preheat oven to 350 degrees. Lightly grease baking sheets. Cream margarine with sugar and brown sugar until fluffy. Blend in pumpkin, egg, and vanilla. Sift flour, baking soda, baking powder, cinnamon, nutmeg and salt. Add to pumpkin mixture and blend well. Stir in chocolate chips and nuts. Drop batter by heaping teaspoons onto prepared sheets. Bake until lightly browned, about 12-14 minutes. Remove cookies to wire rack and cool completly. Note: This might be good with 1/8 - 1/4 tsp of ginger, too. I have my own pumpkin cookie recipe that I may try with chocolate chips. Will post that recipe, too.
