Mocha Mousse Cheesecake Crust 1 cup chocolate chip cookie crumbs 2 Tbsp salted butter, melted Filling three pckgs cream cheese, softened 1/2 cup white sugar 1/2 cup light brown sugar, packed 1 cup sour cream 3 large eggs 1 1/4 cups semisweet choc chips, melted 1/2 cup freshly brewed coffee 1 Tbsp pure vanilla ext Glaze 3/4 cup semusweet chocolate 1/4 cup butter, softened Preheat oven to 350 Crust use blender or food processor to grind cookies into fine crumbs. Add butter and blend until smooth. Press crust into bottom of 9 inch spring form pan. refrigerate while preparing mousse. filling In a large bowl beat cream cheese until smooth with electric mixer. Add sugars and sour cream, blend thoughly. Add eggs and beat until smooth. Add melted chocolate, coffee and vanilla again blending until smooth. Pour filling into prepared pan and bake on middleof oven for 50 to 60 min. Turn oven off, crack door 1 inch and leave in oven 1 hour to set. then remove from oven and cool to room temp. Glaze In a small saucepan melt chocolate and butter over low heat. Stir until smooth. Pour glaze over top of cheesecake and smooth with spatula. Refrigerate 3 to 4 hours until firm.
