=========================================================================== BBS: The GWE BBS [ASV] [CIN] Date: 01-18-31 (57 19) Number: 100 From: JAKE THE SNAKE #193 @1546 Refer#: NONE To: ALL Recvd: YES Subj: CHEESE SOUP Conf: (37) Home Cooki --------------------------------------------------------------------------- Cheese Soup I would be remiss in my duties if I did not pass on this great recipe of  Jeanne Benoit's for Cheddar Cheese Soup: 3 tbsp butter 2 carrots, grated 1/2 c. celery, diced 1 large onion 1 small parsnip, peeled & grated 2-3 cups mild cheddar cheese, grated 2 tbsp butter 4 tbsp flour 4 cups consomme 2 cups milk sale & pepper Melt the 3 tbsp butter in a saucepan, add the vegetables. Cover and simmer  10 minutes over low heat. Blend 2 tbsp butter with flour and add to  vegetables and consomme. Stir together until creamy and continue cooking over  low heat for about 5-8 minutes. Add grated cheese. Stir until melted. Then,  gradually add cold milk. Continue to cook for another 10 minutes. Do not  boil after cheese is added. Season to taste with salt and pepper, add a bifg  handful of chopped parsley, and serve. Let me know how you like it.
