If you do fries the way the  chip joints do it, you fry up small batches so the chips don't break or get  stuck together. This 1st fry is done between 350-375 degree F. till they're  yellowish & limp, then you pour them out on a pan to cool, this lets some of  the potato's moisture evaporate. Then re-fry between 325-350 degrees for a  crisp chip. If you want to do it as one batch, lower the heat mid-way through  the frying. Usually it takes about 20-25 minutes as a once-only batch.
