Cut the cleaned chickens in halves. Coat each half with seasoned flour. Dip in slightly beaten egg diluted with 2 Tbsp. of water and then in fine bread crumbs. Pan fry in hot butter. Brown both sides. There should be 1/2 inch butter in pan for best results. Place the browned halves in one layer in a shallow pan. Do Not overcrowd. Cook uncovered, in a slow oven 300 until tender. Serve immediately.
