Keep covered with damp paper. Firmer Icing: 6 oz. icing sugar, 2 oz. butter flavoring Softer Icing: 3 oz. icing sugar, 2 oz. butter flavoring Do not use less sugar than this, otherwise the mixture will be too greasy. Hint: 1. always sieve the icing sugar, small lumps will not come out as they are creamed with the butter. 2. never warm the butter for the icing must be light in texture and if the butter is oiled it spoils the texture as well as the appearance.
