=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 04-28-03 (06 19) Number: 376 From: GRANNY #44 @7354*2 Refer#: NONE To: ALL Recvd: YES Subj: Beef Enchiladas Conf: (37) Home Cooki --------------------------------------------------------------------------- 16 corn tortillas 3 cups ground beef filling( see below) 3/4 cups chopped onions 1 1/2 cups shredded sharp cheddar cheese 2 cups sour cream 2 2/2 cups canned enchilda sauce Ground Beef Filling 1 lb lean ground beef 1 tbls oil 1 med chopped onion 1/2 cup enchilada sauce Break apart beef and brown in nopn-stick skillet over medium heat; add oil if necessary. Add onion and cook until sort. Moisten with enchilda sauce. Slowly simmer 10 min stirring occasionally. Makes 3 cups. Preheat oven to 350 degrees. Dip tortilla in heated enchiulada sauce to soften. Spoon about 3 tablespoons ground beef filling down the center of each tortilla and sprinkle with about 2 tsp onion. Roll tortilla around filling and place seam side down in a single layer in an ungreased 13x9x2. Pour enough sauce over enchilades to moisten entire surface of casserole. Sprinkle with cheese. Bake uncovered 15 to 20 min(if using glass casserole bake 325 degree oven until hot thoughout. Remove enchiladas from oven ant top with chilled sour cream.
