=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 04-01-93 (09:06) Number: 407 From: CHEFFIE #53 @7171*1 Refer#: NONE To: ALL Recvd: YES Subj: czech recipe Conf: (37) Home Cooki --------------------------------------------------------------------------- PASKA Easter Bread Basic Dough Cheese Dough 1 oz. yeast 1 oz.yeast 2tblsp. salt 1 lb. dry cottage cheese 1 c. warm water 1 c. yellow raisins 1 tplsp. sugar 4 egg yolks 1/4 lb. butter 1 c. sugar 2 c. milk,scalded 1 tsp. salt 8 c. flour 1 tsp. grated lemon rind 3 eggs 1 tsp. baking powder 1\2 c. milk,warmed 3 c. flour, sifted Basic Dough-Combine yeast and sugar in 1/2 c. warm water. Set aside for 5 min. Pour boiling milk over sugar and butter. Add remaing 1\2 c. water. Cool to lukewarm. Sift flour into bowl, add salt, eggs,milk mixture, and yeast. Knead until smooth and elastic. Cover. Let rise until doubled. Cheese Dough - Combine yeast and 1 tblsp. sugar in warm milk and let stand 5 minutes. Mix cottage cheese with spoon until smooth. Add raisins and yeast mixture. Add egg yolks, remaining sugar, salt,lemon rind, baking powder and flour, and knead well. Let rise untill doubled in bulk. Divide into 4 parts. When Basic dough has doubled in size,turn out onto lightly floured board and divide into 4. Cover and let rest for 15 min. Take 1 part of dough and lightly punch around edge so that the center is elevated. Take a piece of Cheese Dough, make a plump ring with it,and place it around the elevated center of the Basic Dough. Make an opening in the center. Join edges of the center with the outside edges, making sure that all the Cheese Dough is covered. Put into a tube pan and let rise for 30 minutes,covered. Brush top with egg yolk. Bake at 325 for 10 minutes, increase temperature to 350 and bake 40 minutes longer. Repeat with remaining dough. cheffie cooks!
