It's somewhat like the "Miami Slice" made by Miami's Big Cheese, but better in my opinion! Ingredients 1 pre-made pizza (Albertson's is good for this -- sweet sauce!) 1 can pineapple rings 12 oz. ricotta cheese Cinnamon (not cinnamon sugar) Unwrap the pizza (this is very very important =) ). Spread the ricotta onto it evenly. It should be about 1/4 to 1/2 inch thick. Lay the pineapple rings all over the ricotta. Fit them well, and you should be able to use the whole can. Now sprinkle a generous dose of cinnamon over the whole thing. Bake at about 25 or 50 degress LOWER than is recommended on the pizza package, or you risk browning the outside without heating the inside. Slow and steady wins this race. Enjoy! Oh, yeah... this pizza will be very heavy, so be sure you have a VERY sturdy plate. I tried to use the cardboard bottom, as I usually do... bad move. =)
