(if unavailable, use maple syrup.) 2 cups self-raising flour 1 1/2 tsp. ground ginger 3/4 tsp. cinnamon ( 1/4 pint cream for decoration ) Oven 350F. Grease an 8 inch square cake tin. Peel, core and chop the apples. Cream butter and sugar until light and fluffy. Beat in the eggs and syrup. Sift flour, ginger and cinnamon. Fold into creamed mixture with the apples. Put mixture into tin and bake for 1 hour, or until cooked. May be cut into slices or left as a cake and decorated with whipped cream and sprinkled with cinnamon. This is an authentic English recipe, which my family has made many times. The recipe was originally in ounces and pounds, but I have converted it to cups. It is delicious, and must be tried!
