                   English Shortbread

1 Cup butter
1/2 cup sugar
3 cups all-purposse flour

Preheat oven to 375F
   Mix the butter and sugar together with the mixer until light and
creamy then, using the mixer on a slow speed, gradually work in the
flour until the mixture holds together.  Knead the dough lightly with
the hands, and press into two greased 8-inch round cake pans.  Pinch the
edges and prick all over with a fork.  Put into oven and bake for 20
minutes until pale golden.  When cold, pry out of pans gently, and cut
into triangles.
