                        Victoria Sandwich

Ingredients:
8 oz. butter or margarine
8 oz. sugar
4 large eggs
8 oz. self-raising flour

To fill:
A little jam

To decorate:
sugar or confectioners sugar

1.  Cream butter and sugar together until soft and light.
2.  Whisk the eggs well and gradually beat into the mixture.
3.  Lastly, fold in the sieved flour.
4.  Put into two greased and floured 8-9 inch sandwich tins.
5.  Bake for 20 minutes, oven preheated to 360F.
6.  Turn out carefully onto a folded cloth on the palm of the hand,
and reverse onto a cooling tray to prevent wire marking top of cake.
7.  When cold, sandwich and fill with jam, top with sieved sugar.
