2 cups cooked and drained pinto beans
4 hard boiled eggs chopped
1/2 cup montery jack cheese in cubes
1/4 cup onion rings
2 tbls oil
1 tbl vinegar
1 tbl red chile sauce
1 tsp mustard
1/4 tsp salt
1/4 tsp pepper
1/4 cup bacon bits

Mix together the beans, eggs, cheese onion rings
Chill.
Combine remaining ingredients and pour over the bean mixture.
Mix well.
Sprinkle with crisp bacon bits if desired.
Serve on lettuce leaves.]
