RE: Rice, Red beans, and ?

3 slices of bacon, diced
3 hot dogs, sliced
1 med onion, diced
1 green pepper, diced
1/2 tsp salt (optional)
red pepper to taste
16oz tomato sauce
small can tomato paste
15oz can of dark red kidney beans, drained
1 cup dry rice/2 cups water.

In a saucepan, saute the onions and green pepper with the bacon and hot dogs.

Add seasoning...when the onion is tender, add the tomato sauce/paste, stir,

simmer covered for an hour...add the kidney beans and heat through.  While this

stuff is cooking:

Mix rice with water, bring to boil, then cover and turn on low heat...cook til

rice is tender and water all absorbed (about 15 minutes) or cook rice any way

you like it.  Spoon bean mixture over rice and eat it.
