Spices also should be determined by you. Here is my recipe. I use some chili oil (hot) to saute onions, sweet peppers, carrots and celery.  I add some garlic (chopped), cayenne pepper (ground), cajun seasoning, ground  black pepper, cumin powder, ground celantro and anything else you'd like.  Saute until veggies are firm and then remove from heat. While the veggies are  cooking shred some cheese (your favorite will do..... I use montery jack with  jalapena pepper). If you have a micro wave toss a flour tortilla shell in for  about 20 secs. and place on a flat plate. Place a sprinkle of shredded cheese  in a line on the tortilla shell, add veggies on top of the cheese and roll up.  (the package will usually have a diagram if you don't know how to roll them,  they also have heating instructions if you don't have a microwave. Use a tooth  pick to hold them together after they have been rolled up and place them on a  separate plate. When all are finished put some more (just a few drops) of  chili oil in the same frying pan you used to fry the veggies (removing any  left of veggies ... of course), and sprinkle a tiny bit of seasonings into the  pan (if you'd like them extra spicy). Now place the rolled up tortilla shells  into the pan and fry for about 2-5 min. turning over on all (four) sides until  slightly brown. Remove from pan and enjoy. Me and my better half really enjoy  these delightful Quesadillas, and they are pretty quick and easy. You may  substitute a reduce fat cheese if you are watching the fat and they still come  out tasting great.
