                        ROCK CAKES

8 oz self-raising flour
2 oz sugar
pinch of salt
1/4 tsp. ground cinnamon
3 oz butter
3 oz raisins
1 egg, beaten
4 tbsp. milk
4 tbsp. sugar (to sprinkle on top.)

Sift the flour, sugar, salt and cinnamon into a bowl.  Rub in the butter
until mixture resembles fine breadcrumbs.  Stir in the raisins.
Beat in the egg and milk.  Spoon tablespoons of the batter on to well-
greased baking sheets, well spaced apart.  Sprinkle the sugar over the
tops and put into the oven preheated to 375F.  Bake for 15 to 20 minutes,
until pale golden.

Makes about 15-18 cakes.
