Here is an interesting recipe I found in the local newspaper.  I just tried
it out and it is in the oven now.  I'll let you know how it turns out.

« cup flour
« cup sugar
4 eggs
2 cups milk
1 cup coconut
1 tsp vanilla
3 tbl butter

     Put everything into a blender and mix well.  Pour into a 9-inch buttered
pie pan.  Bake at 400ø fro 25-30 minutes until custard sets.  Serve cold.

NOTE:  This will be a liquid when you put it into the pan.  It is supposed to
then form its' own crust, with a custard pie in the middle, and a crispy
coconut topping.  We'll see.  I'll post later to let you know how it works.
